The overall approach of the FieldFOOD project to overcome the main technological and industrial limitations in the introduction of PEF technology in the food industry for different applications consists of 7 work packages:
WP1 – Characterization of the raw material
Physico‐chemical and microbial characterization of the raw materials to be used in the project.
WP2 – Process design at pilot plant scale
Determination of optimal processing conditions including PEF treatment and related processing steps to deliver the greatest benefits derived of the introduction of PEF at pilot plant scale.
WP3 – PEF equipment development
Constructing the modular portable tailored PEF prototype for the different applications.
WP4 – Integration of PEF in the current processing lines of SMEs
Integration of the tailored PEF equipments in the processing lines of the SME companies involved in the project.
WP5 – Industrial demonstration
Industrial demonstration and validating benefits of PEF on‐site.
WP6 – Dissemination, technology transfer and communication
WP7 – Management of the project
